Mexican Stew Night!

Eat your heart out Rachel Ray!  Just jokes really.   Cooking can be so fun and creative.  I'm always trying new things and I cook by taste not by measurement.  So try it out and taste it...if you like more seasoning or veggies...just add it.  You don't have to follow recipes to the "T".

First,  you brown your stew meat.  I dust mine with Brown rice flour.  I use gluten free products.  If you don't need to use Gluten free then use REGULAR flour.  Seriously!

Once the meat is browned, put it in your slow cooker.  Then, you saute garlic and onions, red and green bell pepper.  Toss that in the slow cooker.  Make sure to scrape up all the browned bits!  
Then you add 2 cans of tomato sauce to your pan, a carton of chicken broth, 2-3 TBS of cumin and chili powder.....and a can of fire roasted tomatoes.  Stir together and add to slow cooker.
Once that is all stirred up in the slow cooker set it to Low for 4-6 hours.  You can cook on the stove top for 30-45 minutes.  I love my slow cooker because I can do it ahead of time and forget about it until it's time to eat.  

The slow cooker makes the meat fall apart in your mouth.  It's just fabulous. Really!


About and hour or so before you want to eat..you can add any veggies you like.  I personally like to add Summer squash.   You can also add beans or corn....I keep mine simple with the peppers, tomatoes, and squash. 

 Serve the stew with warm tortillas.  Use corn for a gluten free option.  Flour tortillas are delicious to use as a scooper for the chunks of stew meat.  Use your choice of garnish....cilantro, cheese, sour cream, jalapenos....whatever you like!  I keep mine simple here too.  The stew speaks for itself.  Go ahead and try it!
